Jalapeno Cheddar Corn Muffins

Ingredients

  • 1 box Jiffy cornbread mix 8.5 oz
  • 1 egg
  • 1/4 cup butter melted
  • 1/3 cup milk
  • 2 Tbsp canned jalapeno peppers diced and drained
  • 1 cup cheddar cheese shredded

Instructions

  1. Preheat oven to 375 F. Combine cornbread mix, egg and butter in a bowl, and mix well.

  2. Add remaining ingredients and combine well. Mixture will be thick and lumpy.

  3. Place cornbread in a greased muffin tin (makes 6 muffins).

  4. Bakefor 15-20 minutes or until golden brown.
